A quick and flavorful one-pan meal featuring spicy Cajun shrimp served over fluffy rice. Perfect for a simple weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1/2 cup chopped bell pepper (any color)
- 1/4 cup chopped onion
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add shrimp and season with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add uncooked rice, chicken broth, chopped bell pepper, and chopped onion to the same skillet. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
- Stir in cooked shrimp and chopped parsley.
- Serve immediately.
Notes
- Adjust the amount of Cajun seasoning to your spice preference.
- You can add other vegetables like corn or peas.
- For a spicier dish, add a pinch of cayenne pepper.
