Description

A quick and flavorful one-pan meal featuring spicy Cajun shrimp served over fluffy rice. Perfect for a simple weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped onion
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add shrimp and season with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add uncooked rice, chicken broth, chopped bell pepper, and chopped onion to the same skillet. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  5. Stir in cooked shrimp and chopped parsley.
  6. Serve immediately.

  • Adjust the amount of Cajun seasoning to your spice preference.
  • You can add other vegetables like corn or peas.
  • For a spicier dish, add a pinch of cayenne pepper.
