Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1/4 cup honey
  • 1 tbsp rice vinegar
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1/4 tsp red pepper flakes (optional)
  • Cooked rice, for serving
  • Sesame seeds and sliced green onions, for garnish


Instructions

  1. Place chicken thighs in the crockpot.
  2. In a bowl, whisk together teriyaki sauce, honey, rice vinegar, garlic powder, ginger, and red pepper flakes (if using).
  3. Pour the sauce over the chicken, ensuring it is evenly coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and easily shreds.
  5. Shred the chicken with two forks directly in the crockpot.
  6. Serve over cooked rice and garnish with sesame seeds and green onions.

Notes

  • For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the crockpot during the last 30 minutes of cooking.
