Enjoy a flavorful and easy Crockpot Creamy Cajun Chicken Pasta. This recipe combines chicken, pasta, and a creamy Cajun sauce, all cooked in your slow cooker.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (10.75 oz) can condensed cream of chicken soup
- 1 cup chicken broth
- 1 (8 oz) package cream cheese, softened
- 2 tbsp Cajun seasoning
- 1 lb pasta, cooked according to package directions
- 1/2 cup heavy cream
- 2 tbsp chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Sear chicken breasts for 2-3 minutes per side.
- Place the seared chicken in the crockpot.
- Add onion, garlic, red bell pepper, green bell pepper, and diced tomatoes to the crockpot.
- In a bowl, whisk together cream of chicken soup, chicken broth, cream cheese, and Cajun seasoning. Pour over the chicken and vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- Remove chicken from the crockpot and shred with two forks. Return the shredded chicken to the crockpot.
- Stir in the cooked pasta and heavy cream. Mix well.
- Garnish with fresh parsley and serve.
Notes
- Adjust Cajun seasoning to your preferred spice level.
- You can use rotisserie chicken to save time. Add it during the last 30 minutes of cooking.
- For a spicier dish, add a pinch of cayenne pepper.
