Description

Enjoy a flavorful and easy Crockpot Creamy Cajun Chicken Pasta. This recipe combines chicken, pasta, and a creamy Cajun sauce, all cooked in your slow cooker.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1 cup chicken broth
  • 1 (8 oz) package cream cheese, softened
  • 2 tbsp Cajun seasoning
  • 1 lb pasta, cooked according to package directions
  • 1/2 cup heavy cream
  • 2 tbsp chopped fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Sear chicken breasts for 2-3 minutes per side.
  2. Place the seared chicken in the crockpot.
  3. Add onion, garlic, red bell pepper, green bell pepper, and diced tomatoes to the crockpot.
  4. In a bowl, whisk together cream of chicken soup, chicken broth, cream cheese, and Cajun seasoning. Pour over the chicken and vegetables.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  6. Remove chicken from the crockpot and shred with two forks. Return the shredded chicken to the crockpot.
  7. Stir in the cooked pasta and heavy cream. Mix well.
  8. Garnish with fresh parsley and serve.

Notes

  • Adjust Cajun seasoning to your preferred spice level.
  • You can use rotisserie chicken to save time. Add it during the last 30 minutes of cooking.
  • For a spicier dish, add a pinch of cayenne pepper.
