Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound carrots, peeled and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth


Instructions

  1. Place carrots and onion in the bottom of the crockpot.
  2. Add garlic, thyme, salt, and pepper.
  3. Place chicken breasts on top of the vegetables.
  4. Pour chicken broth over the chicken.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Notes

  • For thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the crockpot during the last 30 minutes of cooking.
  • Add potatoes for a heartier meal.
  • Adjust seasonings to your preference.
