Ingredients
- 4 boneless, skinless chicken breasts
- 1 pound carrots, peeled and chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth
Instructions
- Place carrots and onion in the bottom of the crockpot.
- Add garlic, thyme, salt, and pepper.
- Place chicken breasts on top of the vegetables.
- Pour chicken broth over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Notes
- For thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the crockpot during the last 30 minutes of cooking.
- Add potatoes for a heartier meal.
- Adjust seasonings to your preference.
