Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup fresh spinach


Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add garlic and sun-dried tomatoes to the skillet and cook for 1 minute, until fragrant.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese and red pepper flakes (if using).
  5. Return chicken to the skillet. Add spinach and cook until wilted, about 1-2 minutes.
  6. Serve immediately over pasta, rice, or mashed potatoes.
