Description

A quick and flavorful one-pot meal featuring tender chicken, orzo pasta, sun-dried tomatoes, and spinach in a creamy sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Add orzo pasta to the skillet and toast for 1-2 minutes, stirring constantly.
  6. Pour in chicken broth and add chopped sun-dried tomatoes. Bring to a boil.
  7. Return the browned chicken to the skillet. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is cooked and liquid has mostly been absorbed.
  8. Stir in heavy cream and fresh spinach. Cook until spinach wilts, about 2-3 minutes.
  9. Remove from heat and stir in Parmesan cheese. Season with salt and pepper to taste.
  10. Serve hot.

Notes

  • For a richer flavor, you can use half-and-half instead of heavy cream.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Fresh basil or parsley can be used as a garnish.
