Description
A quick and flavorful one-pot meal featuring tender chicken, orzo pasta, sun-dried tomatoes, and spinach in a creamy sauce.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup heavy cream
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add orzo pasta to the skillet and toast for 1-2 minutes, stirring constantly.
- Pour in chicken broth and add chopped sun-dried tomatoes. Bring to a boil.
- Return the browned chicken to the skillet. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is cooked and liquid has mostly been absorbed.
- Stir in heavy cream and fresh spinach. Cook until spinach wilts, about 2-3 minutes.
- Remove from heat and stir in Parmesan cheese. Season with salt and pepper to taste.
- Serve hot.
Notes
- For a richer flavor, you can use half-and-half instead of heavy cream.
- Add a pinch of red pepper flakes for a touch of heat.
- Fresh basil or parsley can be used as a garnish.
