Description
Enjoy Creamy Tuscan Chicken without the pasta. This one-pan recipe is a healthy and easy dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 cup fresh spinach
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 5-7 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
- Add sun-dried tomatoes and garlic to the skillet. Cook for 1 minute, until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer.
- Stir in Parmesan cheese until melted and smooth.
- Add spinach and cook until wilted.
- Return chicken to the skillet and coat with sauce.
- Simmer for 2-3 minutes to heat through.
- Serve immediately.
Notes
- For a thicker sauce, simmer for a longer time.
- Serve with cauliflower rice or roasted vegetables.
- Add a pinch of red pepper flakes for a spicy kick.
