Description

Enjoy Creamy Tuscan Chicken without the pasta. This one-pan recipe is a healthy and easy dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 cup fresh spinach
  • Salt and pepper to taste


Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 5-7 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  4. Add sun-dried tomatoes and garlic to the skillet. Cook for 1 minute, until fragrant.
  5. Pour in heavy cream and chicken broth. Bring to a simmer.
  6. Stir in Parmesan cheese until melted and smooth.
  7. Add spinach and cook until wilted.
  8. Return chicken to the skillet and coat with sauce.
  9. Simmer for 2-3 minutes to heat through.
  10. Serve immediately.

Notes

  • For a thicker sauce, simmer for a longer time.
  • Serve with cauliflower rice or roasted vegetables.
  • Add a pinch of red pepper flakes for a spicy kick.
