Ingredients
- 1.5 lbs Chicken Breast, cut into cubes
- 1 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Paprika
- 1/4 tsp Red Pepper Flakes
- Salt and Pepper to taste
- 1 tbsp Butter
- 2 cloves Garlic, minced
- 1 cup Heavy Cream
- 1/2 cup Chicken Broth
- 1/2 cup Sun-dried Tomatoes, oil-packed, drained
- 1 cup Spinach, fresh
- 1/4 cup Parmesan Cheese, grated
- Cooked Rice, for serving
Instructions
- Season chicken with olive oil, garlic powder, onion powder, paprika, red pepper flakes, salt, and pepper.
- Cook chicken in a skillet over medium-high heat until browned and cooked through. Set aside.
- Melt butter in the same skillet. Add minced garlic and cook until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer.
- Add sun-dried tomatoes and spinach. Cook until spinach wilts.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked chicken back to the skillet and toss to coat with the sauce.
- Serve over cooked rice.
Notes
- Adjust the amount of red pepper flakes for desired spice level.
- Use chicken thighs for a richer flavor, if you like.
- Serve with cauliflower rice for a low-carb option.
