Enjoy this Creamy Tomato Chicken recipe for a quick and easy weeknight meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into cubes
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh basil, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through.
  3. Remove chicken from skillet and set aside.
  4. Add onion and garlic to the skillet and cook until softened.
  5. Stir in crushed tomatoes, heavy cream, Parmesan cheese, oregano, salt, and pepper.
  6. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  7. Add chicken back to the skillet and heat through.
  8. Garnish with fresh basil and serve.

Notes

  • Serve over pasta, rice, or mashed potatoes.
  • Add a pinch of red pepper flakes for a little heat.
  • You can use chicken thighs instead of chicken breasts.
