Description
A quick and easy one-pot creamy Parmesan spinach orzo. This dish is perfect for busy weeknights and is sure to become a family favorite.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 5 ounces fresh spinach
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the orzo and toast for 1-2 minutes.
- Pour in the broth and bring to a simmer.
- Cover and cook for 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.
- Stir in the heavy cream and Parmesan cheese until the sauce is creamy.
- Add the spinach and stir until wilted.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- For a vegetarian option, use vegetable broth.
- Add cooked chicken or shrimp for a heartier meal.
- Garnish with extra Parmesan cheese and fresh parsley.
