Description

A quick and easy one-pot creamy Parmesan spinach orzo. This dish is perfect for busy weeknights and is sure to become a family favorite.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in the orzo and toast for 1-2 minutes.
  5. Pour in the broth and bring to a simmer.
  6. Cover and cook for 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.
  7. Stir in the heavy cream and Parmesan cheese until the sauce is creamy.
  8. Add the spinach and stir until wilted.
  9. Season with salt and pepper to taste.
  10. Serve immediately.

  • For a vegetarian option, use vegetable broth.
  • Add cooked chicken or shrimp for a heartier meal.
  • Garnish with extra Parmesan cheese and fresh parsley.
