Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 8 oz cremini mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 tsp dried thyme
- Salt and pepper to taste
- 1 cup frozen peas
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from skillet and set aside.
- Add mushrooms and onion to the skillet and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
- Stir in flour and cook for 1 minute, stirring constantly. Gradually whisk in chicken broth until smooth. Bring to a simmer, then stir in heavy cream, Parmesan cheese, and thyme. Season with salt and pepper to taste.
- Reduce heat to low and simmer for 5 minutes, or until sauce has thickened slightly.
- Stir in frozen peas and cooked chicken. Pour mixture into a 9×13 inch baking dish.
- Top with shredded cheddar cheese and bake for 20-25 minutes, or until cheese is melted and bubbly and casserole is heated through.
- Let stand for 5-10 minutes before serving.
Notes
- You can use different types of mushrooms based on your preference.
- Add a splash of white wine to the mushroom mixture for extra flavor.
- Serve over rice, pasta, or mashed potatoes.
