Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 8 ounces sliced mushrooms
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breasts and cook until golden brown and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
- Add mushrooms and onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in heavy cream and parsley. Season with salt and pepper to taste.
- Return chicken breasts to the skillet and simmer for 5 minutes, or until heated through.
- Serve immediately.
