Description

A simple and delicious one-pot meal featuring creamy orzo pasta with tender chicken and a bright lemon parmesan sauce. Perfect for a quick and satisfying weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  2. Add orzo to the skillet and toast for 1-2 minutes, stirring constantly.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is al dente and most of the liquid is absorbed.
  4. Stir in heavy cream, Parmesan cheese, and lemon juice. Return chicken to the skillet.
  5. Cook, stirring, until the sauce is creamy and heated through, about 2-3 minutes.
  6. Stir in fresh parsley. Season with salt and pepper to taste. Serve immediately.

Notes

  • For a richer flavor, you can add a clove of minced garlic with the orzo.
  • Adjust lemon juice to your preference.
  • Garnish with extra Parmesan cheese and parsley before serving.
