Description
A simple and delicious one-pot meal featuring creamy orzo pasta with tender chicken and a bright lemon parmesan sauce. Perfect for a quick and satisfying weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add orzo to the skillet and toast for 1-2 minutes, stirring constantly.
- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is al dente and most of the liquid is absorbed.
- Stir in heavy cream, Parmesan cheese, and lemon juice. Return chicken to the skillet.
- Cook, stirring, until the sauce is creamy and heated through, about 2-3 minutes.
- Stir in fresh parsley. Season with salt and pepper to taste. Serve immediately.
Notes
- For a richer flavor, you can add a clove of minced garlic with the orzo.
- Adjust lemon juice to your preference.
- Garnish with extra Parmesan cheese and parsley before serving.
