A simple and delicious creamy lemon garlic chicken recipe perfect for a quick weeknight dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in heavy cream and Parmesan cheese. Bring to a simmer.
- Return chicken to the skillet. Cook until heated through and sauce has thickened.
- Stir in lemon juice and parsley.
- Season with additional salt and pepper if needed.
- Serve hot.
Notes
- Serve with pasta, rice, or your favorite vegetable.
- For a richer flavor, you can add a tablespoon of butter with the olive oil.
