Description

A quick and easy pan-seared salmon recipe with a rich and creamy garlic Tuscan sauce. This one-pan meal is perfect for a weeknight dinner.


Ingredients

  • 2 salmon fillets (6-8 oz each)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons fresh spinach, chopped
  • 1 tablespoon fresh basil, chopped
  • Salt and black pepper to taste


Instructions

  1. Pat the salmon fillets dry with paper towels. Season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear salmon fillets for 3-4 minutes per side, until golden brown and cooked through. Remove salmon from skillet and set aside.
  4. Add butter to the same skillet. Once melted, add minced garlic and cook for 1 minute until fragrant.
  5. Pour in heavy cream and bring to a simmer.
  6. Stir in sun-dried tomatoes and spinach. Cook for 2-3 minutes until spinach wilts and sauce thickens slightly.
  7. Stir in fresh basil. Season sauce with salt and pepper to taste.
  8. Return salmon fillets to the skillet and spoon sauce over them.
  9. Serve immediately.

  • For a lighter sauce, use half-and-half instead of heavy cream.
  • Add a squeeze of lemon juice for extra brightness.
  • Serve with pasta, rice, or crusty bread to soak up the sauce.
