Description
A quick and easy pan-seared salmon recipe with a rich and creamy garlic Tuscan sauce. This one-pan meal is perfect for a weeknight dinner.
Ingredients
- 2 salmon fillets (6-8 oz each)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons fresh spinach, chopped
- 1 tablespoon fresh basil, chopped
- Salt and black pepper to taste
Instructions
- Pat the salmon fillets dry with paper towels. Season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear salmon fillets for 3-4 minutes per side, until golden brown and cooked through. Remove salmon from skillet and set aside.
- Add butter to the same skillet. Once melted, add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer.
- Stir in sun-dried tomatoes and spinach. Cook for 2-3 minutes until spinach wilts and sauce thickens slightly.
- Stir in fresh basil. Season sauce with salt and pepper to taste.
- Return salmon fillets to the skillet and spoon sauce over them.
- Serve immediately.
Notes
- For a lighter sauce, use half-and-half instead of heavy cream.
- Add a squeeze of lemon juice for extra brightness.
- Serve with pasta, rice, or crusty bread to soak up the sauce.
