Ingredients

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 packet taco seasoning
  • 1 can (10 ounces) diced tomatoes and green chilies
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn kernels
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: sour cream, avocado, cilantro


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced chicken and cook until browned.
  3. Add onion and bell pepper to the skillet and cook until softened.
  4. Stir in taco seasoning, diced tomatoes and green chilies, black beans, and corn.
  5. Bring to a simmer and cook for 5 minutes.
  6. Stir in cream cheese until melted and smooth.
  7. Top with shredded cheddar cheese and cook until melted.
  8. Serve with your favorite taco toppings.
