Ingredients
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 packet taco seasoning
- 1 can (10 ounces) diced tomatoes and green chilies
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn kernels
- 4 ounces cream cheese, softened
- 1/2 cup shredded cheddar cheese
- Optional toppings: sour cream, avocado, cilantro
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken and cook until browned.
- Add onion and bell pepper to the skillet and cook until softened.
- Stir in taco seasoning, diced tomatoes and green chilies, black beans, and corn.
- Bring to a simmer and cook for 5 minutes.
- Stir in cream cheese until melted and smooth.
- Top with shredded cheddar cheese and cook until melted.
- Serve with your favorite taco toppings.

- Adjust taco seasoning to your preference.
- Use rotisserie chicken for an even quicker meal.
- Add a splash of chicken broth if the mixture is too thick.
