Description
A comforting and flavorful dish featuring tender chicken and mushrooms in a creamy sauce, served over rice.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 8 oz cremini mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp all-purpose flour
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add mushrooms and onion to the skillet and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
- Sprinkle flour over the mushroom mixture and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth until smooth. Bring to a simmer and cook until slightly thickened, about 2-3 minutes.
- Stir in heavy cream, Parmesan cheese, and thyme. Season with salt and pepper to taste.
- Return chicken to the skillet and heat through.
- Serve creamy chicken and mushroom mixture over cooked rice.
Notes
- For a richer flavor, use bone-in, skin-on chicken thighs.
- You can substitute other types of mushrooms, such as shiitake or oyster mushrooms.
- Add a splash of white wine to the sauce for extra flavor.
