Description

A comforting and flavorful dish featuring tender chicken and mushrooms in a creamy sauce, served over rice.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp all-purpose flour
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Cooked rice, for serving


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add mushrooms and onion to the skillet and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  4. Sprinkle flour over the mushroom mixture and cook for 1 minute, stirring constantly.
  5. Gradually whisk in chicken broth until smooth. Bring to a simmer and cook until slightly thickened, about 2-3 minutes.
  6. Stir in heavy cream, Parmesan cheese, and thyme. Season with salt and pepper to taste.
  7. Return chicken to the skillet and heat through.
  8. Serve creamy chicken and mushroom mixture over cooked rice.

Notes

  • For a richer flavor, use bone-in, skin-on chicken thighs.
  • You can substitute other types of mushrooms, such as shiitake or oyster mushrooms.
  • Add a splash of white wine to the sauce for extra flavor.
