Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1 cup milk
  • 1 cup broccoli florets
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken, salt, and pepper. Cook until browned, about 5-7 minutes.
  2. Add orzo, chicken broth, and milk to the pot. Bring to a boil, then reduce heat and simmer, stirring occasionally, for 10 minutes.
  3. Stir in broccoli florets and minced garlic. Continue to simmer for another 5 minutes, or until orzo is cooked and broccoli is tender-crisp.
  4. Remove from heat. Stir in Parmesan cheese and heavy cream until well combined and creamy.
  5. Serve immediately.
