Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 cup milk
- 1 cup broccoli florets
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 2 cloves garlic, minced
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken, salt, and pepper. Cook until browned, about 5-7 minutes.
- Add orzo, chicken broth, and milk to the pot. Bring to a boil, then reduce heat and simmer, stirring occasionally, for 10 minutes.
- Stir in broccoli florets and minced garlic. Continue to simmer for another 5 minutes, or until orzo is cooked and broccoli is tender-crisp.
- Remove from heat. Stir in Parmesan cheese and heavy cream until well combined and creamy.
- Serve immediately.
Notes
- For a richer flavor, use half-and-half instead of milk.
- Add other vegetables like peas or carrots if desired.
