Description

Quick and easy creamy chicken and rice skillet recipe. Perfect for a weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper. Add chicken to the skillet and cook until browned on all sides.
  3. Add onion and garlic to the skillet and cook until softened, about 3 minutes.
  4. Stir in rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked and liquid is absorbed.
  5. Stir in heavy cream and Parmesan cheese. Cook until heated through.
  6. Garnish with parsley and serve.

Notes

  • For extra flavor, add 1/2 teaspoon of Italian seasoning to the skillet along with the onion and garlic.
  • You can substitute brown rice for white rice, but the cooking time will need to be increased.
  • Add vegetables to the skillet with the onion and garlic, such as chopped carrots, celery, or bell peppers.
