Description
Quick and easy creamy chicken and rice skillet recipe. Perfect for a weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper. Add chicken to the skillet and cook until browned on all sides.
- Add onion and garlic to the skillet and cook until softened, about 3 minutes.
- Stir in rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked and liquid is absorbed.
- Stir in heavy cream and Parmesan cheese. Cook until heated through.
- Garnish with parsley and serve.
Notes
- For extra flavor, add 1/2 teaspoon of Italian seasoning to the skillet along with the onion and garlic.
- You can substitute brown rice for white rice, but the cooking time will need to be increased.
- Add vegetables to the skillet with the onion and garlic, such as chopped carrots, celery, or bell peppers.
