Description
This Creamy Cajun Chicken Pasta is an easy and flavorful weeknight meal. Enjoy tender chicken and perfectly cooked pasta in a rich, creamy Cajun sauce.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 pound pasta (penne, fettuccine, or your choice)
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Season chicken with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in diced tomatoes, heavy cream, and chicken broth. Bring to a simmer and cook for 5 minutes, or until sauce has thickened slightly.
- Stir in Parmesan cheese and parsley. Season with salt and pepper to taste.
- Add cooked pasta and chicken to the skillet and toss to combine.
- Serve immediately.

- Adjust Cajun seasoning to your preference.
- Add a pinch of red pepper flakes for extra heat.
- Use any vegetables you like.
