Description

This Creamy Cajun Chicken Pasta is an easy and flavorful weeknight meal. Enjoy tender chicken and perfectly cooked pasta in a rich, creamy Cajun sauce.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 pound pasta (penne, fettuccine, or your choice)
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season chicken with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  5. Stir in diced tomatoes, heavy cream, and chicken broth. Bring to a simmer and cook for 5 minutes, or until sauce has thickened slightly.
  6. Stir in Parmesan cheese and parsley. Season with salt and pepper to taste.
  7. Add cooked pasta and chicken to the skillet and toss to combine.
  8. Serve immediately.
