Description

A quick and easy one-pot creamy Cajun chicken pasta. This dish is perfect for a spicy weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 8 oz pasta (penne or rotini work well)
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Season chicken pieces with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet or pot over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add onion and bell pepper to the skillet. Cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in diced tomatoes and chicken broth. Bring to a simmer.
  5. Add pasta to the skillet. Cover and cook according to pasta package directions, stirring occasionally, until al dente.
  6. Stir in heavy cream and shredded cheddar cheese. Cook until cheese is melted and sauce is creamy.
  7. Return chicken to the skillet and stir to combine. Heat through.
  8. Season with additional salt and pepper if needed. Serve hot.

  • For a milder dish, reduce the amount of Cajun seasoning.
