Description
A quick and easy one-pot creamy Cajun chicken pasta. This dish is perfect for a spicy weeknight dinner.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1/2 cup heavy cream
- 8 oz pasta (penne or rotini work well)
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Season chicken pieces with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet or pot over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion and bell pepper to the skillet. Cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes and chicken broth. Bring to a simmer.
- Add pasta to the skillet. Cover and cook according to pasta package directions, stirring occasionally, until al dente.
- Stir in heavy cream and shredded cheddar cheese. Cook until cheese is melted and sauce is creamy.
- Return chicken to the skillet and stir to combine. Heat through.
- Season with additional salt and pepper if needed. Serve hot.
Notes
- Adjust Cajun seasoning to your spice preference.
- For a milder dish, reduce the amount of Cajun seasoning.
- Add other vegetables like broccoli or spinach if desired.
