Description

A quick and easy one-pot pasta dish featuring tender chicken, broccoli, and a creamy Alfredo sauce. Perfect for a weeknight family dinner.

Ingredients

  • 1 pound fettuccine
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups broccoli florets

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add chicken, salt, and pepper. Cook until browned.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pot.
  4. Stir in heavy cream and Parmesan cheese. Bring to a gentle simmer.
  5. Add fettuccine and broccoli florets. Stir to combine.
  6. Cover the pot and cook for 10-12 minutes, or until pasta is al dente and broccoli is tender-crisp, stirring occasionally.
  7. Serve immediately.

Notes

  • For a healthier option, use whole wheat fettuccine.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Garnish with fresh parsley before serving.
