Description

Enjoy a comforting and easy vegetarian lentil one-pot meal.


Ingredients

  • 1 cup brown or green lentils, rinsed
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  3. Add garlic, thyme, and smoked paprika and cook for 1 minute more.
  4. Stir in lentils, vegetable broth, and diced tomatoes. Add bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  6. Remove bay leaf. Season with salt and pepper to taste.
  7. Serve hot.

Notes

  • Add a squeeze of lemon juice before serving for brightness.
  • Garnish with fresh parsley or a dollop of yogurt.
  • For a thicker consistency, mash some of the lentils against the side of the pot.
