Description
Enjoy a comforting and easy vegetarian lentil one-pot meal.
Ingredients
- 1 cup brown or green lentils, rinsed
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 4 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Add garlic, thyme, and smoked paprika and cook for 1 minute more.
- Stir in lentils, vegetable broth, and diced tomatoes. Add bay leaf.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
- Remove bay leaf. Season with salt and pepper to taste.
- Serve hot.
Notes
- Add a squeeze of lemon juice before serving for brightness.
- Garnish with fresh parsley or a dollop of yogurt.
- For a thicker consistency, mash some of the lentils against the side of the pot.
