Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup chopped broccoli
- 1 cup sliced bell peppers
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded carrots
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat oven to 400°F (200°C).
- Cut chicken breasts into bite-sized pieces.
- In a bowl, toss chicken with olive oil, paprika, garlic powder, and black pepper.
- Spread chicken on a baking sheet and bake for 15-20 minutes, or until cooked through.
- Divide quinoa, broccoli, bell peppers, tomatoes, and carrots evenly among four meal prep containers.
- Top with cooked chicken.
- Drizzle each bowl with balsamic vinaigrette.
- Refrigerate until ready to eat.
