Prepare healthy and delicious Clean Eating Chicken Bowls for easy meal prep.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped broccoli
  • 1 cup sliced bell peppers
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded carrots
  • 1/4 cup balsamic vinaigrette


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut chicken breasts into bite-sized pieces.
  3. In a bowl, toss chicken with olive oil, paprika, garlic powder, and black pepper.
  4. Spread chicken on a baking sheet and bake for 15-20 minutes, or until cooked through.
  5. Divide quinoa, broccoli, bell peppers, tomatoes, and carrots evenly among four meal prep containers.
  6. Top with cooked chicken.
  7. Drizzle each bowl with balsamic vinaigrette.
  8. Refrigerate until ready to eat.
