Ingredients
- 1 tablespoon olive oil
- 1/2 cup cooked chickpeas, rinsed and drained
- 2 large eggs
- Salt, to taste
- Black pepper, to taste
- Optional: chopped fresh herbs (like parsley or cilantro) for garnish
Instructions
- Heat olive oil in a non-stick skillet over medium heat.
- Add the chickpeas to the skillet and cook for 2-3 minutes, stirring occasionally, until lightly golden.
- Create two wells in the chickpeas.
- Carefully crack one egg into each well.
- Season the eggs with salt and pepper.
- Cover the skillet and cook for 3-5 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
- Garnish with fresh herbs, if using.
- Serve immediately.
Notes
- For a firmer yolk, cook for a longer time.
- You can add other vegetables like spinach or diced bell peppers along with the chickpeas.
