  • 1/2 cup cooked chickpeas, rinsed and drained
  • 2 large eggs
  • Salt, to taste
  • Black pepper, to taste
  • Optional: chopped fresh herbs (like parsley or cilantro) for garnish


Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add the chickpeas to the skillet and cook for 2-3 minutes, stirring occasionally, until lightly golden.
  3. Create two wells in the chickpeas.
  4. Carefully crack one egg into each well.
  5. Season the eggs with salt and pepper.
  6. Cover the skillet and cook for 3-5 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
