Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cups chicken broth
  • 1 cup frozen peas
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1/4 cup all-purpose flour
  • 1/2 cup milk


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned.
  3. Add onion, carrots, and celery to the skillet. Cook until softened, about 5 minutes.
  4. Stir in thyme, salt, and pepper.
  5. Pour in chicken broth and bring to a simmer.
  6. In a small bowl, whisk together flour and milk until smooth.
  7. Pour flour mixture into the skillet and stir until the sauce thickens.
  8. Stir in peas, green beans, and corn.
  9. Pour mixture into a 9×13 inch baking dish.
  10. Bake for 20-25 minutes, or until golden brown and bubbly.
  11. Let cool slightly before serving.
