Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 cups chicken broth
- 1 cup frozen peas
- 1 cup frozen green beans
- 1 cup frozen corn
- 1/4 cup all-purpose flour
- 1/2 cup milk
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned.
- Add onion, carrots, and celery to the skillet. Cook until softened, about 5 minutes.
- Stir in thyme, salt, and pepper.
- Pour in chicken broth and bring to a simmer.
- In a small bowl, whisk together flour and milk until smooth.
- Pour flour mixture into the skillet and stir until the sauce thickens.
- Stir in peas, green beans, and corn.
- Pour mixture into a 9×13 inch baking dish.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Let cool slightly before serving.
Notes
- Use your favorite vegetables.
- Add a layer of mashed potatoes on top for a heartier casserole.
- Store leftovers in the refrigerator for up to 3 days.
