Description

A comforting and hearty chicken and potato casserole, perfect for a family dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 2 lbs potatoes, peeled and cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned.
  3. Add onion and garlic to the skillet and cook until softened.
  4. In a large bowl, combine potatoes, chicken mixture, chicken broth, heavy cream, salt, pepper, and paprika.
  5. Pour mixture into a 9×13 inch baking dish.
  6. Bake for 45-50 minutes, or until potatoes are tender and chicken is cooked through.
  7. Sprinkle with cheddar cheese and bake for an additional 5 minutes, or until cheese is melted and bubbly.
  8. Let stand for 10 minutes before serving.
