A comforting and hearty chicken and potato casserole, perfect for a family dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 2 lbs potatoes, peeled and cubed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned.
- Add onion and garlic to the skillet and cook until softened.
- In a large bowl, combine potatoes, chicken mixture, chicken broth, heavy cream, salt, pepper, and paprika.
- Pour mixture into a 9×13 inch baking dish.
- Bake for 45-50 minutes, or until potatoes are tender and chicken is cooked through.
- Sprinkle with cheddar cheese and bake for an additional 5 minutes, or until cheese is melted and bubbly.
- Let stand for 10 minutes before serving.
Notes
- You can use different types of cheese, such as mozzarella or Monterey Jack.
- Add vegetables like carrots or peas.
- For a spicier casserole, add a pinch of cayenne pepper.
