Description
A quick and easy one-pot Chicken Parmesan Pasta Skillet. Enjoy a cheesy and flavorful meal with minimal cleanup.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 1 pound pasta (penne, rotini, or your favorite shape)
- 2 cups chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from skillet and set aside.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper. Bring to a simmer.
- Add pasta and chicken broth to the skillet. Stir well to combine.
- Return chicken to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until pasta is cooked and liquid is absorbed.
- Remove from heat and stir in mozzarella and Parmesan cheese until melted and creamy.
- Garnish with fresh basil leaves and serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
- Feel free to use different types of cheese, such as provolone or asiago.
- You can add vegetables like bell peppers or mushrooms to the skillet along with the onion and garlic.
