Description

A quick and easy one-pot Chicken Parmesan Pasta Skillet. Enjoy a cheesy and flavorful meal with minimal cleanup.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1 pound pasta (penne, rotini, or your favorite shape)
  • 2 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from skillet and set aside.
  2. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  3. Stir in crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper. Bring to a simmer.
  4. Add pasta and chicken broth to the skillet. Stir well to combine.
  5. Return chicken to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until pasta is cooked and liquid is absorbed.
  6. Remove from heat and stir in mozzarella and Parmesan cheese until melted and creamy.
  7. Garnish with fresh basil leaves and serve immediately.

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the sauce.
  • Feel free to use different types of cheese, such as provolone or asiago.
  • You can add vegetables like bell peppers or mushrooms to the skillet along with the onion and garlic.
