Description

A simple one-pan chicken parmesan orzo bake.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup uncooked orzo
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 1/4 cup Italian-style breadcrumbs


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss chicken pieces with olive oil, Italian seasoning, salt, and pepper.
  3. In a 9×13 inch baking dish, combine uncooked orzo and marinara sauce. Stir well.
  4. Arrange seasoned chicken pieces over the orzo mixture.
  5. Cover the dish tightly with foil.
  6. Bake for 25 minutes.
  7. Remove foil, sprinkle mozzarella cheese and breadcrumbs over the top.
  8. Bake uncovered for another 10-15 minutes, or until cheese is melted and golden brown, and orzo is tender.
  9. Let stand for 5 minutes before serving.

Notes

  • For crispier breadcrumbs, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
  • Feel free to add your favorite vegetables like spinach or bell peppers.
