Description
A simple one-pan chicken parmesan orzo bake.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup uncooked orzo
- 2 cups marinara sauce
- 1.5 cups shredded mozzarella cheese
- 1/4 cup Italian-style breadcrumbs
Instructions
- Preheat oven to 400°F (200°C).
- Toss chicken pieces with olive oil, Italian seasoning, salt, and pepper.
- In a 9×13 inch baking dish, combine uncooked orzo and marinara sauce. Stir well.
- Arrange seasoned chicken pieces over the orzo mixture.
- Cover the dish tightly with foil.
- Bake for 25 minutes.
- Remove foil, sprinkle mozzarella cheese and breadcrumbs over the top.
- Bake uncovered for another 10-15 minutes, or until cheese is melted and golden brown, and orzo is tender.
- Let stand for 5 minutes before serving.
Notes
- For crispier breadcrumbs, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
- Feel free to add your favorite vegetables like spinach or bell peppers.
