A delicious and easy-to-make Chicken Nacho Casserole. It is perfect for parties or a comforting weeknight meal.
Ingredients
- 1 pound cooked chicken, shredded
- 1 bag (10 ounces) tortilla chips
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 jar (16 ounces) salsa
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional)
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Spread a layer of tortilla chips in a 9×13 inch baking dish.
- Top with chicken, black beans, corn, and salsa.
- Sprinkle with cheddar cheese.
- Bake for 15-20 minutes, or until cheese is melted and bubbly.
- Top with sour cream and cilantro before serving (optional).

- Use different types of cheese.

- For a spicier casserole, add jalapenos.
