Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/3 cup all-purpose flour
- 4 cups chicken broth
- 1/2 cup milk
- 6 medium potatoes, peeled and cubed
- 1/4 cup milk
- 1/4 cup butter

Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side, then remove and set aside.
- In the same skillet, sauté onion until softened. Add garlic and cook for 1 minute.
- Melt butter in the skillet. Whisk in flour until smooth. Gradually whisk in chicken broth and milk until thickened.
- Season gravy with salt and pepper to taste.
- Place mashed potatoes in a baking dish.
- Pour gravy over the potatoes.
- Arrange seared chicken breasts on top of the gravy.
- Bake for 20-25 minutes, or until chicken is cooked through.

- You can use rotisserie chicken for a quicker meal.
