Description

A vibrant and healthy Chicken Fajita Protein Bowl featuring roasted vegetables for a satisfying meal.


Ingredients

  • 1 lb Chicken Breast, cut into strips
  • 1 Bell Pepper (any color), sliced
  • 1 Onion, sliced
  • 1 Zucchini, diced
  • 1 cup Cherry Tomatoes, halved
  • 1 tbsp Olive Oil
  • 1 tbsp Fajita Seasoning
  • 1 cup Cooked Brown Rice or Quinoa
  • 1/2 cup Black Beans, rinsed and drained
  • 1/4 cup Salsa
  • 1/4 cup Guacamole
  • 2 tbsp Fresh Cilantro, chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss bell pepper, onion, zucchini, and cherry tomatoes with olive oil and fajita seasoning.
  3. Spread vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly charred.
  4. While vegetables are roasting, cook chicken in a skillet over medium heat with remaining fajita seasoning until cooked through.
  5. Assemble bowls by dividing brown rice or quinoa, roasted vegetables, chicken, black beans, salsa, and guacamole among bowls.
  6. Garnish with fresh cilantro.
  7. Serve immediately.
