A hearty and comforting Chicken Cornbread Casserole perfect for a simple dinner.
Ingredients
- 1 pound cooked chicken, shredded
- 1 (15 ounce) can creamed corn
- 1 (14.75 ounce) can whole kernel corn, drained
- 1 cup sour cream
- 1 (8.5 ounce) package cornbread mix
- 1/2 cup milk
- 2 large eggs
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine cooked chicken, creamed corn, drained corn, and sour cream.
- In a separate bowl, mix together cornbread mix, milk, and eggs.
- Pour cornbread mixture over the chicken mixture and stir to combine.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle cheddar cheese over the top.
- Bake for 30-35 minutes, or until golden brown and set.
- Let cool slightly before serving.

- You can use leftover rotisserie chicken for convenience.
