Ingredients
- 1 lb cooked chicken, shredded
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 cup salsa
- 1/2 cup gluten-free enchilada sauce
- 1 tsp chili powder
- 1/2 tsp cumin
- 6 gluten-free tortillas, cut into pieces
- 1 cup dairy-free cheese shreds (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, black beans, corn, salsa, enchilada sauce, chili powder, and cumin. Mix well.
- Spread a thin layer of the chicken mixture in the bottom of a baking dish.
- Arrange a layer of tortilla pieces over the chicken mixture.
- Top with another layer of chicken mixture, followed by more tortilla pieces.
- Sprinkle dairy-free cheese shreds over the top, if desired.
- Bake for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- For a spicier casserole, use a hotter salsa or add a pinch of cayenne pepper.
- You can substitute ground turkey or beef for the chicken.
- Store leftovers in the refrigerator for up to 3 days.
