Description

This Easy Chicken Burrito Casserole is a healthy and flavorful meal. It’s gluten-free and can be made dairy-free. Enjoy a simple and satisfying dinner.


Ingredients

  • 1 lb cooked chicken, shredded
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 cup salsa
  • 1/2 cup gluten-free enchilada sauce
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 6 gluten-free tortillas, cut into pieces
  • 1 cup dairy-free cheese shreds (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, salsa, enchilada sauce, chili powder, and cumin. Mix well.
  3. Spread a thin layer of the chicken mixture in the bottom of a baking dish.
  4. Arrange a layer of tortilla pieces over the chicken mixture.
  5. Top with another layer of chicken mixture, followed by more tortilla pieces.
  6. Sprinkle dairy-free cheese shreds over the top, if desired.
  7. Bake for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
  8. Let cool slightly before serving.

Notes

  • For a spicier casserole, use a hotter salsa or add a pinch of cayenne pepper.
  • You can substitute ground turkey or beef for the chicken.
