Description

A simple and delicious chicken burrito casserole, perfect for a weeknight meal. This dish combines classic burrito flavors in an easy-to-bake format.


Ingredients

  • 1 pound ground chicken
  • 1 packet taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup salsa
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Cheddar cheese
  • 8-10 corn tortillas, cut into strips
  • 1 tablespoon vegetable oil


Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook the ground chicken over medium heat until browned. Drain off any excess fat.
  3. Stir in the taco seasoning, black beans, diced tomatoes and green chilies, and salsa. Cook for 5 minutes, stirring occasionally.
  4. In a separate bowl, combine the Monterey Jack and Cheddar cheeses.
  5. In a greased 9×13 inch baking dish, layer half of the tortilla strips.
  6. Spread half of the chicken mixture over the tortilla layer.
  7. Sprinkle half of the cheese mixture over the chicken.
  8. Repeat the layers with the remaining tortilla strips, chicken mixture, and cheese.
  9. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  10. Let stand for 5 minutes before serving.

Notes

  • Serve with your favorite burrito toppings like sour cream, avocado, or cilantro.
  • For a spicier casserole, use a can of hot diced tomatoes and green chilies.
  • You can substitute ground turkey or beef for the chicken if desired.
