Description
A simple and delicious chicken burrito casserole, perfect for a weeknight meal. This dish combines classic burrito flavors in an easy-to-bake format.
Ingredients
- 1 pound ground chicken
- 1 packet taco seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 cup salsa
- 1 cup shredded Monterey Jack cheese
- 1/2 cup shredded Cheddar cheese
- 8-10 corn tortillas, cut into strips
- 1 tablespoon vegetable oil
Instructions
- Preheat your oven to 375 degrees F (190 degrees C).
- In a large skillet, cook the ground chicken over medium heat until browned. Drain off any excess fat.
- Stir in the taco seasoning, black beans, diced tomatoes and green chilies, and salsa. Cook for 5 minutes, stirring occasionally.
- In a separate bowl, combine the Monterey Jack and Cheddar cheeses.
- In a greased 9×13 inch baking dish, layer half of the tortilla strips.
- Spread half of the chicken mixture over the tortilla layer.
- Sprinkle half of the cheese mixture over the chicken.
- Repeat the layers with the remaining tortilla strips, chicken mixture, and cheese.
- Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Let stand for 5 minutes before serving.
Notes
- Serve with your favorite burrito toppings like sour cream, avocado, or cilantro.
- For a spicier casserole, use a can of hot diced tomatoes and green chilies.
- You can substitute ground turkey or beef for the chicken if desired.
