Description

A flavorful and nutritious Chicken & Black Bean Power Bowl without rice. Enjoy a high-protein, low-carb meal.


Ingredients

  • 1 lb Chicken Breast, cooked and shredded
  • 1 (15 ounce) can Black Beans, rinsed and drained
  • 1 cup Corn Kernels, fresh or frozen
  • 1 Red Bell Pepper, diced
  • 1/2 Red Onion, diced
  • 1 Avocado, diced
  • 1/4 cup Cilantro, chopped
  • 2 tablespoons Lime Juice
  • 1 tablespoon Olive Oil
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Cumin
  • Salt and Pepper to taste


Instructions

  1. In a large bowl, combine cooked chicken, black beans, corn, red bell pepper, and red onion.
  2. In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
  3. Pour the dressing over the chicken and bean mixture. Toss to combine.
  4. Divide the mixture into bowls.
  5. Top with diced avocado and chopped cilantro.
  6. Serve immediately.
