Ingredients
- 1 lb Chicken Breast, cooked and shredded
- 1 (15 ounce) can Black Beans, rinsed and drained
- 1 cup Corn Kernels, fresh or frozen
- 1 Red Bell Pepper, diced
- 1/2 Red Onion, diced
- 1 Avocado, diced
- 1/4 cup Cilantro, chopped
- 2 tablespoons Lime Juice
- 1 tablespoon Olive Oil
- 1 teaspoon Chili Powder
- 1/2 teaspoon Cumin
- Salt and Pepper to taste
Instructions
- In a large bowl, combine cooked chicken, black beans, corn, red bell pepper, and red onion.
- In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
- Pour the dressing over the chicken and bean mixture. Toss to combine.
- Divide the mixture into bowls.
- Top with diced avocado and chopped cilantro.
- Serve immediately.
