Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces fettuccine pasta
- 8 ounces cremini mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil and butter in a large skillet or pot over medium-high heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add sliced mushrooms and chopped onion to the skillet. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Add fettuccine pasta to the skillet. Stir well to prevent sticking.
- Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally.
- Stir in heavy cream and grated Parmesan cheese.
- Return cooked chicken to the skillet.
- Season with salt and pepper to taste.
- Cook for another 2-3 minutes, until the sauce has thickened and the chicken is heated through.
- Garnish with fresh parsley before serving.

- For a richer flavor, you can use a mix of mushrooms like shiitake or oyster mushrooms.
- If you prefer a lighter sauce, you can use half-and-half instead of heavy cream.
