Description

Enjoy a comforting and cheesy chicken cauliflower bake that’s low in carbs. It’s a keto-friendly meal that’s easy to make.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 1.5 lbs boneless, skinless chicken breasts, cooked and shredded
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil cauliflower florets until tender. Drain well.
  3. In a large bowl, combine cooked cauliflower, shredded chicken, cream cheese, sour cream, cheddar cheese, mozzarella cheese, green onions, garlic, salt, and pepper.
  4. Mix well until all ingredients are evenly distributed.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 20-25 minutes, or until golden brown and bubbly.
  7. Let it cool for a few minutes before serving.

Notes

  • You can use pre-cooked rotisserie chicken for convenience.
