Description
A comforting and easy cheesy chicken and broccoli rice casserole, perfect for a weeknight family dinner.
Ingredients
- 2 cups cooked rice
- 2 cups cooked chicken, chopped
- 1 cup broccoli florets, steamed
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup breadcrumbs
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the cooked rice, cooked chicken, and steamed broccoli.
- In a separate bowl, mix the cream of chicken soup, shredded cheddar cheese, and milk until well combined.
- Pour the soup mixture over the chicken and rice mixture and stir gently to coat everything.
- Transfer the mixture to a greased 8×8 inch baking dish.
- In a small bowl, mix the breadcrumbs and melted butter. Sprinkle this mixture evenly over the top of the casserole.
- Bake for 20-25 minutes, or until the casserole is bubbly and the topping is golden brown.
- Let it rest for a few minutes before serving.
Notes
- You can use leftover cooked chicken or rotisserie chicken.
- Adjust the amount of cheese to your preference.
- For a crispier topping, add a little more butter to the breadcrumbs.
