Description

A comforting and easy cheesy chicken and broccoli rice casserole, perfect for a weeknight family dinner.


Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, chopped
  • 1 cup broccoli florets, steamed
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup breadcrumbs
  • 2 tablespoons butter, melted


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cooked rice, cooked chicken, and steamed broccoli.
  3. In a separate bowl, mix the cream of chicken soup, shredded cheddar cheese, and milk until well combined.
  4. Pour the soup mixture over the chicken and rice mixture and stir gently to coat everything.
  5. Transfer the mixture to a greased 8×8 inch baking dish.
  6. In a small bowl, mix the breadcrumbs and melted butter. Sprinkle this mixture evenly over the top of the casserole.
  7. Bake for 20-25 minutes, or until the casserole is bubbly and the topping is golden brown.
  8. Let it rest for a few minutes before serving.

Notes

  • You can use leftover cooked chicken or rotisserie chicken.
  • Adjust the amount of cheese to your preference.
  • For a crispier topping, add a little more butter to the breadcrumbs.
