Ingredients

  • 1 pound ground beef
  • 1/2 pound Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup shredded carrots
  • 1 cup frozen corn
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package Velveeta cheese, cubed
  • 1 cup milk
  • Optional toppings: shredded cheddar cheese, cooked bacon, sour cream, green onions


Instructions

  1. In a large pot or Dutch oven, brown ground beef and Italian sausage over medium-high heat. Drain off any excess grease.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in beef broth and diced tomatoes. Stir in carrots, corn, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
  5. Add Velveeta cheese and milk to the pot. Stir until cheese is melted and soup is smooth.
