Ingredients
- 1 pound ground beef
- 1/2 pound Italian sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup shredded carrots
- 1 cup frozen corn
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (16 ounce) package Velveeta cheese, cubed
- 1 cup milk
- Optional toppings: shredded cheddar cheese, cooked bacon, sour cream, green onions
Instructions
- In a large pot or Dutch oven, brown ground beef and Italian sausage over medium-high heat. Drain off any excess grease.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Pour in beef broth and diced tomatoes. Stir in carrots, corn, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
- Add Velveeta cheese and milk to the pot. Stir until cheese is melted and soup is smooth.
- Serve hot and garnish with your favorite toppings.
Notes
- Adjust the amount of milk to reach your desired consistency.
- For a spicier soup, add a pinch of red pepper flakes.
- This soup freezes well. Allow to cool completely before transferring to freezer-safe containers.
