Description
A simple recipe for making delicious candied pecans, also known as praline pecans. These sweet and crunchy nuts are perfect for snacking, topping desserts, or as a homemade gift.
Ingredients
- 2 cups pecan halves
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/4 cup unsalted butter
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Line a baking sheet with parchment paper or a silicone baking mat.
- In a large saucepan, combine granulated sugar, brown sugar, butter, and milk.
- Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
- Bring the mixture to a boil, then reduce heat to medium-low.
- Continue to cook, stirring occasionally, for 5-7 minutes, or until the syrup reaches the soft-ball stage (235-240°F or 113-116°C on a candy thermometer).
- Remove from heat. Stir in vanilla extract, cinnamon, and salt.
- Add the pecan halves to the saucepan and stir to coat them evenly with the syrup.
- Working quickly, spread the coated pecans in a single layer on the prepared baking sheet.
- Let the pecans cool completely. Once cooled, break apart any clusters.
Notes
- For spicier pecans, add a pinch of cayenne pepper.
- Ensure you stir the sugar mixture constantly to prevent burning.
- Use a candy thermometer for accuracy in reaching the soft-ball stage.
