Description
A quick and flavorful Cajun sausage and rice skillet dinner.
Ingredients
- 1 pound smoked sausage, sliced
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sausage and cook until browned. Remove sausage from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in uncooked rice, Cajun seasoning, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
- Return sausage to the skillet and stir to combine.
- Serve hot.
Notes
- For extra heat, add a pinch of cayenne pepper.
- You can substitute chicken broth with vegetable broth for a vegetarian option.
