Description

A quick and easy one-pot Cajun sausage pasta recipe. It’s a flavorful and comforting meal.


Ingredients

  • 1 pound Cajun sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can cream of mushroom soup
  • 1 (8 ounce) package cream cheese, softened
  • 1 pound pasta (penne or rotini)
  • 4 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste


Instructions

  1. In a large pot or Dutch oven, brown the Cajun sausage over medium heat. Drain any excess grease.
  2. Add the onion, garlic, and red bell pepper to the pot and cook until softened, about 5 minutes.
  3. Stir in the diced tomatoes, cream of mushroom soup, cream cheese, pasta, chicken broth, and Cajun seasoning.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the pasta is cooked through and the sauce has thickened.
  5. Season with salt and pepper to taste. Serve hot.
