Description

A quick and easy sheet pan meal featuring spicy buffalo chicken and crispy sweet potato fries.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup buffalo sauce
  • 1 large sweet potato, cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato fries with olive oil, garlic powder, salt, and pepper on a baking sheet.
  3. Bake for 15 minutes.
  4. Toss chicken thighs with buffalo sauce.
  5. Add chicken to the baking sheet with the sweet potatoes.
  6. Bake for another 15-20 minutes, or until chicken is cooked through and sweet potatoes are tender and slightly crispy.
