Description

A quick and easy one-pot pasta dish featuring tender chicken coated in spicy buffalo sauce and creamy cheese.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz pasta (penne, rotini, or your favorite shape)
  • 4 cups chicken broth
  • 1 cup buffalo sauce
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and pepper to taste


Instructions

  1. In a large pot or Dutch oven, combine chicken, pasta, chicken broth, and buffalo sauce.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until pasta is cooked and most of the liquid is absorbed, stirring occasionally.
  4. Stir in heavy cream and cheeses until melted and combined.
  5. Season with salt and pepper to taste.
  6. Serve immediately.

Notes

  • You can adjust the amount of buffalo sauce to control the spice level.
  • For a creamier sauce, add a little more heavy cream.
  • Garnish with chopped green onions or blue cheese crumbles if desired.
