Description
A delicious brown sugar peach cake perfect for any occasion.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups packed light brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 4 cups peeled and sliced fresh peaches
Brown Sugar Glaze
- 1/2 cup (1 stick) unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the sliced peaches.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- While the cake is baking, prepare the glaze. In a saucepan, melt the butter over medium heat. Stir in the brown sugar and milk. Bring to a boil and cook for 1 minute, stirring constantly.
- Remove from heat and stir in the vanilla extract. Gradually whisk in the powdered sugar until smooth.
- Once the cake is out of the oven, immediately pour the glaze evenly over the warm cake.
- Let the cake cool completely before serving.
Notes
- For best results, use fresh, ripe peaches.
- You can substitute canned peaches, but be sure to drain them well.
