Ingredients

  • 4 oz Chicken breast, cubed
  • 1 tbsp Olive oil
  • 1 tbsp Honey
  • 1 tbsp Sriracha sauce
  • 1/2 cup Cooked quinoa
  • 1/2 cup Black beans
  • 1/4 Avocado, sliced
  • 2 tbsp Corn kernels
  • 1 tbsp Cilantro, chopped
  • 1 tbsp Lime juice


Instructions

  1. Cook quinoa according to package instructions.
  2. In a bowl, mix honey and Sriracha sauce.
  3. Heat olive oil in a pan. Add chicken and cook until browned.
  4. Pour honey-sriracha mixture over chicken and cook for 2-3 minutes.
  5. In a bowl, combine quinoa, black beans, avocado, and corn.
  6. Top with cooked chicken.
  7. Garnish with cilantro and lime juice.
  8. Serve immediately.
