Description

Enjoy this creamy and flavorful copycat Zuppa Toscana soup. It features spicy sausage, tender potatoes, and a rich broth.


Ingredients

  • 1 pound spicy Italian sausage, crumbled
  • 6 cups chicken broth
  • 4 cups water
  • 1 pound russet potatoes, thinly sliced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh kale
  • Salt and pepper to taste


Instructions

  1. Brown the sausage in a large pot over medium heat. Drain any excess grease.
  2. Add the chicken broth, water, potatoes, onion, and garlic to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  3. Stir in the heavy cream and kale. Heat through, but do not boil.
  4. Season with salt and pepper to taste.
  5. Serve hot and enjoy.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream.
  • Adjust the amount of sausage to your preference.
  • You can substitute spinach for kale.
