Description
Enjoy this creamy and flavorful copycat Zuppa Toscana soup. It features spicy sausage, tender potatoes, and a rich broth.
Ingredients
- 1 pound spicy Italian sausage, crumbled
- 6 cups chicken broth
- 4 cups water
- 1 pound russet potatoes, thinly sliced
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup chopped fresh kale
- Salt and pepper to taste
Instructions
- Brown the sausage in a large pot over medium heat. Drain any excess grease.
- Add the chicken broth, water, potatoes, onion, and garlic to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Stir in the heavy cream and kale. Heat through, but do not boil.
- Season with salt and pepper to taste.
- Serve hot and enjoy.
Notes
- For a thicker soup, mash some of the potatoes before adding the cream.
- Adjust the amount of sausage to your preference.
- You can substitute spinach for kale.
