Description
Enjoy a simple and delicious chicken burrito casserole. It is a family favorite for an easy weeknight meal.
Ingredients
- 1 pound cooked chicken, shredded
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 jar (16 ounces) salsa
- 1 packet (1.25 ounces) taco seasoning
- 1 cup cooked rice
- 10 flour tortillas, cut into pieces
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional)
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, black beans, corn, salsa, taco seasoning, and cooked rice. Mix well.
- Grease a 9×13 inch baking dish.
- Place a layer of tortilla pieces on the bottom of the dish.
- Spread half of the chicken mixture over the tortillas.
- Sprinkle with one cup of shredded cheddar cheese.
- Repeat layers with remaining tortilla pieces, chicken mixture, and cheese.
- Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for a few minutes before serving.
- Top with sour cream and cilantro, if desired.
Notes
- You can use rotisserie chicken to save time.
- Adjust the amount of taco seasoning to your taste.
- Add diced bell peppers or onions for extra flavor.
- For a spicier casserole, use a hot salsa.
- Store leftovers in the refrigerator.
