Description

Enjoy a simple and delicious chicken burrito casserole. It is a family favorite for an easy weeknight meal.


Ingredients

  • 1 pound cooked chicken, shredded
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 jar (16 ounces) salsa
  • 1 packet (1.25 ounces) taco seasoning
  • 1 cup cooked rice
  • 10 flour tortillas, cut into pieces
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional)
  • 1/4 cup chopped cilantro (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, salsa, taco seasoning, and cooked rice. Mix well.
  3. Grease a 9×13 inch baking dish.
  4. Place a layer of tortilla pieces on the bottom of the dish.
  5. Spread half of the chicken mixture over the tortillas.
  6. Sprinkle with one cup of shredded cheddar cheese.
  7. Repeat layers with remaining tortilla pieces, chicken mixture, and cheese.
  8. Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  9. Let stand for a few minutes before serving.
  10. Top with sour cream and cilantro, if desired.

Notes

  • You can use rotisserie chicken to save time.
  • Adjust the amount of taco seasoning to your taste.
  • Add diced bell peppers or onions for extra flavor.
  • For a spicier casserole, use a hot salsa.
