Description

Ingredients

  • 1 lb Ground Beef
  • 2 Sweet Potatoes, cubed
  • 1 Onion, chopped
  • 1 Bell Pepper, chopped
  • 2 cloves Garlic, minced
  • 1 can (15 oz) Black Beans, rinsed and drained
  • 1 cup Corn
  • 1 Avocado, diced
  • Salsa, to taste
  • Chili Powder, 1 tbsp
  • Cumin, 1 tsp
  • Olive Oil, 2 tbsp
  • Salt and Pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender.
  2. While sweet potatoes are roasting, brown ground beef in a large skillet over medium-high heat. Drain any excess fat.
  3. Add onion and bell pepper to the skillet with the ground beef. Cook until softened, about 5 minutes.
  4. Stir in garlic, chili powder, and cumin. Cook for 1 minute.
  5. Add black beans and corn to the skillet. Heat through.
  6. Assemble bowls by dividing roasted sweet potatoes, ground beef mixture, and avocado among bowls.
  7. Top with salsa and enjoy.
