Ingredients
- 1 lb Ground Beef
- 2 Sweet Potatoes, cubed
- 1 Onion, chopped
- 1 Bell Pepper, chopped
- 2 cloves Garlic, minced
- 1 can (15 oz) Black Beans, rinsed and drained
- 1 cup Corn
- 1 Avocado, diced
- Salsa, to taste
- Chili Powder, 1 tbsp
- Cumin, 1 tsp
- Olive Oil, 2 tbsp
- Salt and Pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender.
- While sweet potatoes are roasting, brown ground beef in a large skillet over medium-high heat. Drain any excess fat.
- Add onion and bell pepper to the skillet with the ground beef. Cook until softened, about 5 minutes.
- Stir in garlic, chili powder, and cumin. Cook for 1 minute.
- Add black beans and corn to the skillet. Heat through.
- Assemble bowls by dividing roasted sweet potatoes, ground beef mixture, and avocado among bowls.
- Top with salsa and enjoy.
